Chicken and Spicy Mayo Sandwiches and Slap Chips


Harvestime Slap Chips

3 Chicken breasts

3 teaspoons garlic and herb seasoning

1 onion sliced and fried until caramelized

½ cup mayonnaise

2 tablespoons peri peri sauce of choice

1 tablespoon oil for frying

Sliced white bread


Prep Time: 5 minutes

Cooking Time: 30 minutes

Serves: 5


  1. Season the chicken breasts and rub the garlic and herb seasoning all over the chicken
  2. Heat the oil in a pan and fry the chicken in batches until cooked, about 4 - 5 minutes per side, until the chicken is fully cooked through
  3. Allow the chicken to cool and then slice/ shred into pieces
  4. In a large bowl, mix the mayo and peri peri sauce, add in the chicken and caramelized onions and combine well
  5. Butter the bread in both sides and spread the chicken mixture onto the bread, cover with the other slice and toast on a hot griddle pan
  6. Serve with Harvestime Slap chips
