Cheesy Chicken & Sweetcorn Casserole


600 grams Harvestime Sweetcorn  

2 cups Harvestime Straight Cut Chips

800 grams cooked chicken chopped into bite size pieces

4 tablespoons butter

½ cup flour

1 litre milk – warmed

3 tablespoons dried herbs of choice

2 cups grated cheese

Salt and pepper to taste



Prep Time: 10 minutes

Total Time: 35 – 40 minutes

Serves: 6 -8


  1. Preheat oven to 180 Degrees Celsius
  2. In an oven proof casserole place the frozen chips and sweetcorn and season with salt and pepper
  3. Now add the chicken on top of the frozen veg and keep aside
  4. Meanwhile In a pot , melt butter, add flour and mix until incorporated
  5. Slowly add the milk to the flour and butter mixture, mix well to break lumps
  6. Whisk constantly until it starts to thicken – add dried herbs
  7. Remove from the heat
  8. Add cheese and mix well
  9. Adjust seasoning
  10. Pour the cheesy sauce over the chicken and veg
  11. Bake for 20 minutes
  12. Top with cheese and bake for a further 5 minutes until cheese has melted
  13. Garnish with chopped parsley
