Beef, Peppers & Onion Stew


1 packet Harvestime Straight Cut Chips  

1,6 kg beef chuck cubed or beef stew cuts

4 tablespoons flour

3 large onions sliced

3 tablespoons garlic crushed

3 tablespoons tomato paste

2 tablespoons dried mixed herbs

4 cups beef stock

1 tin chopped tomato

1 bay leaf

700 grams mixed peppers diced

Salt and pepper to taste

Chopped parsley



Prep Time : 5 minutes

Total Time: 60- 90 minutes

Serves: 6 -8


  1. Dust the beef with salt and pepper
  2. Heat a large pan/pot on medium to high heat and fry the beef in batches until browned on both sides – remove and set aside
  3. To the same pan add a blob of butter and add the onions and sauté for 2 minutes before adding the garlic – saute for about a minute
  4. Add the beef back to the pot and add the bay leaves and mixed herbs
  5. Followed by the tomato paste, beef stock and chopped tomatoes
  6. Mix well
  7. Allow to simmer for about an hour or so before adding the mixed peppers
  8. Cook until meat is tender, and sauce has thickened
  9. You need to check the water hasn’t dried up regularly
  10. Serve & Enjoy with Harvestime Chips (cook from frozen)
