Bean Curry Roti & Chips

Ingredients

1 packet Harvestime Slap Chips

Oil

1 onion chopped

2 teaspoons crushed garlic

3 large tomatoes grated

2 tablespoons curry powder

1 can butter beans rinsed and drained

3 -4 Roti’s

Grated cheese

Salt and pepper

Directions

Prep Time:  20 minutes

Total Time: 10 minutes

 

  1. Fry the chips until half done and set aside
  2. Heat oil in a pot on medium heat and add the onions, fry until translucent before adding the crushed ginger
  3. Add the grated tomatoes and cook for 5 minutes before adding the curry powder
  4. Allow to simmer on medium heat for a further 8 minutes, before adding the beans
  5. Simmer for 5 minutes, adjust seasoning and then switch off
  6. Lay a roti flat and place chips in the middle, top with beans curry and then cheese and wrap
  7. Enjoy with friends & family
