Baked Meatballs with Corn


300 grams Harvestime Corn

A dash of oil

1 kg beef / chicken meatballs

2 teaspoons garlic paste

1 tablespoon tomato paste

2 cans tomato and onion mix

2 teaspoons Paprika

1 teaspoon Chilli flakes (more if you prefer it spicy)

2 teaspoons Mixed herbs

¾ cup Grated cheese

Chopped parsley

Salt and pepper


Prep Time: 5 minutes

Cooking Time: 45 - 50 minutes

Serves: 5


  1. Heat oven to 180 Degrees Celsius
  2. Heat a large pan on medium to high heat, add a dash of oil and start frying the meatballs in batches – remove and set aside
  3. To the same pan, add the garlic and onions and fry until translucent
  4. Now add the tomato paste and the onion and tomato mix and mix well before adding in the chilli flakes, mixed herbs and paprika – allow to cook for 8 minutes
  5. Add the corn and cook on medium heat for 8 - 10 minutes until thickened
  6. Add the meatballs back to the pot and simmer for 3 - 4 minutes and remove from heat
  7. Transfer the meatball and tomato sauce mixture to a large oven proof casserole
  8. Top with grated cheese and bake for 15 minutes
  9. Garnish with chopped parsley and enjoy
