Bacon Loaded Fries


1 packet Harvestime Slap Chips

250 grams Bacon bits fried and set aside

5 eggs

1 teaspoon chilli flakes

1 cup Grated cheese

Handful Baby tomatoes

1 small onion diced

Bunch of spring onions chopped

Salt and pepper to taste


Serves: 4- 5

Prep Time:  5 minutes

Total Time:  25 minutes


  1. Fry the chips until half done and set aside
  2. Fry the bacon, with the onion and baby tomatoes
  3. Place the chips in oven proof frying pan, top with fried bacon, onions and tomatoes
  4. Crack eggs on top of the chips
  5. Sprinkle with the chilli flakes, and cheese
  6. Season and place in the oven for 8-10 minutes to finish off cooking the eggs
  7. Remove from the oven and garnish with chopped spring onions
