Tripe & Pea Curry


300 grams Harvestime Peas  

1 kg Tripe – cleaned and boiled until softened  

2 Tablespoons Oil  

1 large onion diced  

2 tablespoon garlic and ginger  

3 tablespoons curry powder  

2 large tomatoes chopped  

2 sprigs Curry leaves  


1 x Chicken stock cube 

1 teaspoon garam masala  

Salt and pepper to taste  

Chopped coriander  


Serves: 4-6  

Prep Time: 5 minutes  

Total Time: 60-75 minutes  


Heat oil in large pot and fry the onions until translucent  

Add the garlic and ginger and cook for a minute before adding the curry powder, mix with the onions and be careful that the spices don’t burn 

Add the tomatoes and curry leaves and allow fry for about 10 minutes  

Now add the tripe and the stock cube and cook until softened- keep checking and adding water if needed 

Once the tripe begins to soften add the peas 

Cook until the peas are cooked and tripe is nice and soft 

Sprinkle with garam masala and coriander 

Serve with rice or pap
