Oven Baked Fish with Veg and Tomato

Ingredients

3 cups Harvestime All-in-One Mix

1 kg fish fillets – Hake 

Oil 

2 large onions thinly sliced

3 cloves garlic crushed 

3 teaspoons paprika 

½ teaspoon chilli flakes 

2 teaspoons mixed herbs 

4 - 5 large tomatoes chopped 

1 chicken stock cube 

Water 

Salt and pepper to taste 

Fresh parsley chopped – garnish

Directions

Prep Time: 10 Minutes

Cooking Time: 45 Minutes

Serves: 4 - 5

 

  1. Preheat oven to 180 Degrees Celsius 
  2. Heat oil in a large skillet on medium heat 
  3. Add the onions and cook for about 8 - 10 minutes before adding in the crushed garlic 
  4. Allow to sauté for a minute then add the paprika, chilli flakes and mixed herbs 
  5. Season and add in the chopped tomatoes and stock cube 
  6. Let the tomatoes cook and break down – about 10 - 15 minutes 
  7. In goes the All in One mix 
  8. Mix well and cook for a further 10 minutes until veg have softened, remove from the heat 
  9. Season the fish fillets and place them in a large oven tray in a single layer 
  10. Drizzle with oil and top the fish fillets with the veggie tomato mix 
  11. Pop into the oven and bake for 15 minutes, until the fish is cooked and flaky
  12. Garnish and serve
