Mutton Curry Stew

Ingredients

2 cups Harvestime Mix Veg

1 kg Chopped mutton pieces for curry

1 – 2 tablespoons oil

Cinnamon sticks

2 cloves

2 onions sliced

2 tablespoons garlic and ginger paste

1 bay leaf

Curry leaves

3 tablespoons Durban masala 

3 large tomatoes chopped

2 teaspoons cumin and coriander powder

Water

3 large potatoes cubed

Salt and pepper

Garam masala

Chopped coriander

Directions

Prep Time: 5 minutes

Cooking Time: 80 minutes

Serves: 4 - 6

 

  1. Add oil to a large pot on medium heat and add the cinnamon sticks, bay leaf and cloves, allow to fry for a minute or two before adding the sliced onions
  2. Fry the onions until translucent and then add in the ginger and garlic paste, let it fry for a minute
  3. Add in the chopped tomatoes and curry leaves and mix well, allow to cook for 5 minutes before adding the durban masala, cumin and coriander powder
  4. Give it a good toss and add in the meat
  5. Cook on medium low heat until the water is released about 20 - 25 minutes
  6. Add more water, about a cup and cook for a further 20 minutes
  7. Now add in the potatoes and cook for 20 minutes before adding the mix veg
  8. After 10 minutes, sprinkle the garam masala
  9. Remove from the heat
  10. Garnish with coriander and serve
