Hearty Country Crop Stew


6 – 7  cups Harvestime Country Crop

2 cups Harvestime Peas

1 large onion sliced

2 bay leaves

2 tablespoons chopped garlic 

2 cups vegetable stock

2 tablespoons Worcestershire Sauce

1 can chopped tomatoes

Salt and pepper to taste

Chopped parsley




Prep Time: 10 minutes

Total Time: 35 – 40 minutes

Serves: 5- 8  


  1. Heat a large pot on medium to high heat and fry the onions with the bay leaf and sauté for 4 minutes before adding the garlic – saute for about a minute
  2. Add the frozen vegetables to the pot and saute on high heat for 5 minutes
  3. Add the tomato paste, chopped tomatoes, thyme, stock and Worcestershire sauce and mix well
  4. Cover and allow to simmer for 20 minutes until sauce has reduced and thickened
  5. Adjust seasoning
  6. Add chopped chili if you prefer
  7. Serve with Pap & enjoy!
