Sweet Corn Salsa
Harvestime Sweet Corn Salsa


2 Cups Harvestime Sweet Corn

2 Cups Boiling Water

1 Onion, finely diced

2 Fresh Tomatoes, deseeded and finely diced (Use the seeds in soups and sauces)

1 Cucumber, Deseeded and finely diced

80ml White Vinegar

30ml Sugar

2 Pinches Mixed Herbs


Prep Time: 10 minutes

Cooking Time: 20 minutes

Serves: 4


  1. Pour Boiling water over the sweet corn and bring to room temperature.
  2. Drain the water and place the sweet corn in a large salad bowl.
  3. Combine all the remaining ingredients with the sweetcorn.
  4. Season to taste.
  5. Put a cover on the bowl and store in the fridge for 20 to 30 minutes until the flavours have infused before serving.
