Festive Sauteed Corn

Ingredients
250 grams diced bacon
1 red pepper diced
1 onion diced
1 can beans
1 green chilli finely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon vinegar
1 large tomato diced
Spring onions sliced thin
2 tablespoons chopped parsley
Directions
Prep Time: 5 minutes
Cooking Time: 15 - 20 minutes
Serves: 4
- Heat a large skillet over medium high heat, add the diced bacon and fry until crispy
- Remove from the pan and keep aside
- Add the spring onions and cook for 1 - 2 minutes
- Add the pepper, onion and chilli and cook for an additional 2 minutes
- Mix in the frozen corn and beans and stir until they're almost completely cooked
- Season with salt, pepper vinegar, adjusting as needed
- Remove from the heat and add in the bacon, chopped tomatoes and chopped parsley
