Festive Sauteed Corn


Harvestime Corn

250 grams diced bacon

1 red pepper diced

1 onion diced

1 can beans

1 green chilli finely chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon vinegar

1 large tomato diced

Spring onions sliced thin

2 tablespoons chopped parsley


Prep Time: 5 minutes

Cooking Time: 15 - 20 minutes

Serves: 4


  1. Heat a large skillet over medium high heat, add the diced bacon and fry until crispy
  2. Remove from the pan and keep aside
  3. Add the spring onions and cook for 1 - 2 minutes
  4. Add the pepper, onion and chilli  and cook for an additional 2 minutes
  5. Mix in the frozen corn and beans and stir until they're almost completely cooked
  6. Season with salt, pepper vinegar, adjusting as needed
  7. Remove from the heat and add in the bacon, chopped tomatoes and chopped parsley
