Festive Coleslaw
Ingredients
250g Red cabbage
3 Red apples
1 stalk of celery
½ Red Onion
For the Dressing:
125ml Mayonnaise
2 TBSP Mustard
40ml lemon juice
2 ½ TBSP Sweet chilli sauce
Fresh Dill (finely chopped)
Salt and Pepper
Directions
Prep Time: 15 -20 minutes
Cooking Time: 5 minutes
Serves: 4 -5
- Prepare Harvestime Diced Carrots as per cooking instructions. Set aside and cool.
- Thinly slice the red cabbage, celery and red onion and place in large bowl.
- Slice the red apple and place in a bowl of water with lemon juice to reduce oxidation.
- In a small dish, combine the mayo, mustard, white wine vinegar, sweet chilli sauce, chopped dill and seasoning. Mix well until combined.
- In a large bowl, combine all the veg, and red apple and drizzle the dressing over the coleslaw and mix well. Serve and enjoy.
