Festive Beef Stew


400g Harvestime Mixed Veg

900g Stewing beef

2 tbsp oil

2 onions (roughly chopped)

2 tsp Garlic

2 tsp Fresh Ginger

1 tsp Curry powder

½ tsp ground cumin

½ tsp paprika

1 tsp dried rosemary

2 bay leaves

1 T canned tomato/ 4 whole tomatoes

Sweet chilli sauce/chutney

2 cups beef stock

Salt ground black pepper


Prep Time: 15 -20 minutes

Cooking Time: 15 -20 minutes

Serves: 4 -5


  1. Pour the oil in a medium size pot, on medium heat and fry the beef until browned. Remove from the heat and set aside.
  2. In the same pot, add the onions and fry for 3 minutes. Add the garlic and ginger and fry for a further 2 minutes. Add the spices and fry until fragrant but not burnt, further 2mins. Add the meat to the pot.
  3. Add the canned tomato and mix well until well combined. Cook for 3 minutes. Drizzle in the sweet chilli sauce, and beef stock. Let it simmer on low heat for 2 hours.
  4. Stir in the Harvestime Country Mix to the pot, and cook for a further 10 mins.
  5. Season the stew with salt and pepper ( if needed). Put in a large serving dish, and enjoy while warm.
