
Harvestime Festive Beef & Veg Stew

Ingredients
900g Stewing beef
2 tbsp oil
2 onions (roughly chopped)
2 tsp Garlic
2 tsp Fresh Ginger
1 tsp Curry powder
½ tsp ground cumin
½ tsp paprika
1 tsp dried rosemary
2 bay leaves
1 T canned tomato/ 4 whole tomatoes
Sweet chilli sauce/chutney
2 cups beef stock
Salt ground black pepper
Directions
Prep Time: 15 -20 minutes
Cooking Time: 15 -20 minutes
Serves: 4 -5
- Pour the oil in a medium size pot, on medium heat and fry the beef until browned. Remove from the heat and set aside.
- In the same pot, add the onions and fry for 3 minutes. Add the garlic and ginger and fry for a further 2 minutes. Add the spices and fry until fragrant but not burnt, further 2mins. Add the meat to the pot.
- Add the canned tomato and mix well until well combined. Cook for 3 minutes. Drizzle in the sweet chilli sauce, and beef stock. Let it simmer on low heat for 2 hours.
- Stir in the Harvestime Country Mix to the pot, and cook for a further 10 mins.
- Season the stew with salt and pepper ( if needed). Put in a large serving dish, and enjoy while warm.
