Easy Summer Corn and Baby Marrow Salad

Ingredients

2 cups Harvestime Corn

400 grams baby marrow sliced

1/3 cup Baby tomatoes halved

½ cup Cucumber diced

Handful Parsley chopped

Salt and pepper

 

Dressing

Juice of 1 lemon

1 tablespoon Vinegar

2 tablespoons oil

1 teaspoon Sugar

1 teaspoon Garlic and herb seasoning

Salt and pepper

Directions

Prep Time: 5 minutes

Cooking Time: 25 minutes

Serves: 5

 

  1. Fry the corn and baby marrow in a little bit if margarine or oil for 6 - 8 minutes, season and keep aside
  2. In large bowl combine the corn, baby tomatoes, cucumber, parsley, salt and pepper – mix well
  3. Combine all the ingredients listed under Dressing and mix until well combined
  4. Drizzle the dressing over the corn and baby marrow salad and serve
