Country Mix & Rice Casserole


1 packet Harvestime Country Mix

1 cup Harvestime Peas

3 cups pre-cooked rice


1 large onion diced

1 tablespoon crushed garlic

2 tablespoons mixed herbs  

2 cloves garlic crushed

2 tablespoons Mixed herb

2 teaspoons Paprika

1 packet mushroom soup powder mixed with 500m ml warm water

2 cups grated cheese

Chopped parsley

Salt and pepper


Serves: 4-6

Prep Time: 5 minutes

Total Time: 50 – 60 minutes 


  1. Preheat oven to 200 Degrees Celsius
  2. Heat oil in a large pot/ pan (it must be large enough to hold the rice)
  3. Add the onions and allow to cook until translucent
  4. Next add the garlic, mixed herbs and paprika, followed by the frozen vegetables
  5. Allow to cook for 8 minutes and then add the mushroom soup liquid, cook for a further 5 minutes and then add the cooked rice, I cup of grated cheese and parsley and mix well
  6. Adjust seasoning
  7. Transfer to a large ovenproof casserole, top with the remaining cheese and bake for 10 minutes until cheese has melted
  8. Serve immediately
