Country Mix Pork Trotters


400g Harvestime Country Mix

Salt and pepper

1kg Pork Trotters

750ml Beef Stock

2 Bay Leaf

2 TBSP  Oil

1 Onion (finely chopped)

1 TBSP Crushed Garlic

1 tsp Curry Powder

3 TBSP Tomato Sauce

2 TBSP Chutney

1 TBSP Worcestershire Sauce

1 Cup Stock


Prep Time: 10 -15 minutes

Cooking Time: 60 minutes

Serves: 6


  1. Place the pork trotters into a deep saucepan. Add beef stock and bay leaf and simmer on medium heat for an hour. Remove trotters from the pot, keep aside the stock.
  2. In another saucepan, add the oil and fry the onion until soft. Add the garlic and fry for a further 2 minutes. Add the spices and fry for 2 minutes.
  3. Add the tomato sauce, chutney and Worcestershire sauce and mix well.
  4. Return the trotters to the pot and add the remaining stock.  Simmer for an additional 45 minutes or until the trotters are tender.
  5. Add the Harvestime Country Mix to pot, and simmer for 10 minutes.
  6. Put trotters in a serving dish and sprinkle with chopped coriander leaves and serve.
