Chicken & Sweetcorn Curry


2 cups Harvestime Sweetcorn

1,5kg chicken pieces (skin removed)


1 large onion finely sliced

3 tablespoons crushed garlic and ginger

2 sprigs curry leaf

3 tablespoons curry powder

1 teaspoon cumin powder

1 teaspoon turmeric powder

2 large tomatoes chopped

½ - 1 cup water

1 teaspoon crushed black pepper

1 teaspoon garam masala

Chopped dhania

Salt and pepper


Serves: 4-6
Prep Time: 5 minutes
Total Time: 50 – 60 minutes


  1. In a large pot on medium heat add the oil and start frying onions with the curry leaves – about 6 minutes
  2. Add the garlic and ginger and saute for a minute- keep stirring
  3. Add in the curry powder, cumin powder and turmeric powder and mix well – add a dash of water, so the spices don’t burn
  4. Now add the chicken and a tablespoon of salt -mix well and then add the tomatoes
  5. Stir and allow to cook on medium heat – keep checking to see the curry doesn’t begin to dry out, add a little water if it does. Remember we are looking for a dry sort of braised curry
  6. About 10 minutes before the chicken is cooked, add in the frozen sweetcorn
  7. Sprinkle with black pepper and garam masala
  8. Switch off the heat
  9. Garnish with chopped dhania and serve with rice or roti
