Chicken & Rice Tomato Pilau


400 grams Harvestime Country Crop
1 kg chicken drumsticks
1 large onion finely chopped
3 cloves of garlic crushed
Basil chopped
1 can chopped tomatoes
3 heaped teaspoons paprika
1 red pepper finely sliced
300 grams rice
3 -4 cups chicken stock

Prep Time 5 minutes
Total Time 45 – 60 minutes


  1. Preheat oven to 180 degrees Celsius
  2. Heat oil in a heavy based pot
  3. Season the chicken and fry until golden on either side, remove and set aside
  4. To the same pan, add the garlic and onions and cook for 5 minutes
  5. Now add the red pepper and cook for a further 2 minutes before adding the paprika, tomatoes and rice and mix well
  6. Mix well and add the country crop into the rice
  7. Now add the stock and place the chicken thighs on top of the rice
  8. Allow to cook in the oven for 45 minutes until rice has cooked
  9. Garnish with chopped basil
