Chicken Pot Pie


300 grams Harvestime Mix Veg

500 grams chicken breasts cubed

2 tablespoons oil

2 teaspoons crushed garlic

1 heaped tablespoon brown onion powder

300 ml boiling water

3 teaspoons mixed herbs

Salt and pepper to taste

1 egg beaten

Puff pastry


Prep Time: 5 minutes

Cooking Time: 60 minutes

Serves: 4


  1. Heat the olive oil in a large pan over medium high heat
  2. Preheat oven to 200 Degrees Celsius
  3. In a large skillet add the margarine and onions and cook on medium heat for 4 - 5 minutes
  4. Add the garlic and sauté for a minute
  5. Add the chicken cubes and sauté for 4 minutes
  6. Add in the mixed herbs
  7. Mix the brown onion powder with the boiling water until dissolved
  8. Add the mix to the chicken and mix well – simmer for a minute
  9. Add in the frozen veg
  10. Cook until thickened – remove from heat
  11. Add the chicken mixture to a large oven proof casserole
  12. Roll out pastry and place on top of the chicken mixture
  13. Brush with beaten egg and make 2 slits on the pastry
  14. Bake for 25 - 30 minutes until pastry is cooked and golden
  15. Serve immediately with a large salad
