Chicken Livers Kota

Ingredients
Harvestime Straight Cut Chips
500grams Chicken Livers
Oil
1 tablespoon garlic crushed
1 onion diced
1 green pepper diced
2 teaspoons chili powder
2 teaspoons paprika
1 tablespoon tomato paste
Water
Eggs
Salt and pepper to taste
Unsliced bread
Directions
Serves: 1 -2
Prep Time: 5 minutes
Total Time: 30 minutes
- In a pot add oil and allow to heat, fry onions until caramelized
- Add the green pepper and garlic and cook for a further 3-5 minutes
- Now add the chicken livers and cook for about 5 minutes until browned
- Add the salt and the rest of the spices and fry for 2 minutes
- Add the tomato paste, with water and cook for about 8-10 minutes
- Remove from heat
- Adjust seasoning
- Fry an egg to desired preference
- Assemble the Kota – add chips, top with chicken livers and fried egg
- Garnish with parsley
