Chicken Liver & Mix Veg Pasta


300 grams Harvestime Mix Veg  

1 ½ packet Spaghetti boiled and set aside


1 kg chicken livers cleaned

1 large onion diced

4 cloves garlic finely chopped

5 tablespoons tomato paste

1 ½ cup chicken stock

Salt and pepper to taste

Chopped parsley



Prep Time: 10 minutes

Total Time: 30 minutes

Serve: 5 -8


  1. Season the chicken livers
  2. Heat a large pan/pot on medium to high heat, add the oil and fry the chicken livers in batches until browned on both sides – remove the livers from the pan
  3. To the same pan, add more oil if needed and fry the onions until translucent
  4. Add the garlic and fry for 30 seconds before adding the Harvestime mix veg
  5. Allow to fry for about 2 minutes on high heat
  6. Now add the tomato paste and slowly add the chicken stock a little at a time
  7. Allow to simmer for 8 minutes until reduced
  8. Add the livers back into the pot and cook for a further 2 minutes
  9. Season with salt and pepper
  10. Serve with spaghetti or pasta of choice
  11. Garnish with chopped parsley & enjoy!
