Chicken Fried Rice


500 grams Harvestime Country Mix

2 cups rice steamed

600 grams chicken fillets cubed

5 tablespoons soy sauce

2 teaspoons maizena

2 teaspoons water

1 tablespoon black pepper crushed

3 tablespoons Oil

1 large onion sliced

3 cloves garlic crushed

4 large eggs – optional

Salt and pepper to taste



Prep Time: 5 minutes

Total Time: 30 minutes

Serves: 6 -8


  1. Cook the rice and keep aside
  2. Combine the soy sauce, maizena, water and black pepper and mix well – keep aside
  3. Add 2 tablespoons of the soy sauce liquid to the chicken and toss well
  4. Heat oil in a large frying pan on medium to high heat
  5. One hot, start frying the chicken in batches until browned – remove the chicken
  6. To the same pan, add more oil if needed and fry the onions until translucent
  7. Add the crushed garlic to the onions, followed by the Harvestime Country Mix
  8. Cook for 5- 8 minutes before add the rest of the soy sauce liquid, combine well with the veggies
  9. Meanwhile scramble 4 eggs and keep aside
  10. Now add the scrambled egg and rice to the veg mixture and gently toss until it is combined
  11. Adjust seasoning
  12. Serve hot to the whole family.
