Cheesy Beef & Veg Pasta Bake

Ingredients

500 grams Harvestime Mixed Veg

500 grams beef mince

Oil

1 large onion chopped

3 teaspoons crushed garlic

2 teaspoons chilli flakes

2 tablespoons chopped parsley

2 cans tinned tomatoes

1 tablespoon tomato paste

1 beef stock cube

½ cup water

500 grams macaroni

2 cups cheese

Salt and pepper

Directions

Serves: 4-6

Prep Time: 5 minutes

Total Time: 50 – 60 minutes 

 

  1. Preheat oven to 180 Degrees Celsius
  2. Boil the pasta for 8 minutes and strain and keep aside
  3. In a large pot on medium heat add the oil and start frying onions – about 5 minutes
  4. Add the beef and cook until browned and water has dried up
  5. Add the garlic and chilli flakes
  6. Add the tomatoes, tomato paste, stock cube and water and allow to cook for about 20 minutes
  7. Add in the frozen veg and cook until sauce has thickened
  8. Toss the pasta with the saucy beef and veg mix and transfer to a large ovenproof casserole
  9. Sprinkle the cheese and bake for 20 minutes
