Cheesy Bacon and Veg Bake


600 grams Harvestime Country Mix

250 grams Diced bacon

3 tablespoons Margarine

1 onion diced

2 teaspoons crushed garlic

4 tablespoons flour

750 ml milk

200 grams grated cheddar

1 tablespoon mixed herbs

Salt and pepper


Prep Time: 5 minutes

Cooking Time: 50 minutes

Serves: 4


  1. Preheat oven to 180 Degrees Celsius
  2. Heat a large pan and fry the bacon until done and keep aside
  3. Add the onions and sauté for 5 minutes, add the garlic and sauté for a further minute before adding the veg – cook for 6 minutes and remove from the heat
  4. In a saucepan, add the margarine and once melted add the flour, cook for 2 minutes and gradually add the milk a little at a time – make sure there are no lumps
  5. Allow to thicken – stirring frequently
  6. Once thickened add the cheese and bacon – (keep some cheese for topping) and remove from the heat
  7. Place the slightly cooked veg in an oven proof casserole and pour over the cheesy sauce
  8. Top with the remainder of the grated cheese and bake for 20 - 25 minutes
  9. Serve hot
