Beef Sishebo

Ingredients

2 cups Harvestime Mix Veg

1 kg Beef for stewing

2 teaspoons oil

1 large onion diced

2 teaspoons garlic and ginger paste

1 bay leaf

2 tablespoons curry powder of choice

Mixed herbs

2 tablespoons tomato paste

3 large potatoes cubed

3 cups beef stock

Salt and pepper

Directions

Prep Time: 5 minutes

Cooking Time: ±90 minutes

Serves: 4 - 6

 

  1. Add oil to a large pot on medium heat and add the onions, fry until translucent
  2. Add the garlic and ginger and the bay leaves and fry for a further minute
  3. Add the spices and mixed herbs and mix well and then add the beef – add a dash of water and allow the beef to fry with the spices for 5 minutes
  4. Now add the tomato paste and stock and allow to simmer for about 45 minutes until the meat is beginning to soften
  5. Add in the chopped potatoes and cook for 20 minutes before adding in the frozen Mix Veg
  6. Add more water or stock if needed, cook for 10 minutes and it’s done when the meat is tender
  7. Adjust seasoning
  8. Serve with rice or pap
