Baby Potato and Green Pea Salad
Ingredients
300 grams Harvestime Peas
1 kg baby potatoes
Oil
Crushed garlic
1 onion diced
1 - 2 teaspoons mixed herbs or dried herbs of choice
Juice of 1 lemon
Fresh herbs of choice
Salt and pepper
Directions
Prep Time: 5 minutes
Cooking Time: 45 minutes
Serves: 4
- Boil the potatoes until fork tender and keep aside
- In a pan, add the oil and garlic and saute the onions for about 6 minutes
- Add in the peas and mixed herbs and allow to cook for about 5 minutes
- Toss the softened potatoes with the peas and add the lemon juice, salt, pepper and fresh herbs
- Serve and enjoy
